HAM & BEAN SOUP 
1 lb. Great Northern beans
3 qts. ham juice (add water if necessary)
3/4 c. chopped celery
3/4 c. chopped carrots
1 lg. onion, chopped
1 meaty ham bone
2 c. diced ham
1/2 c. ketchup
1/8 tsp. pepper
1/8 tsp. celery powder

Set beans out night before, wash and place in large kettle filled with water. Let stand overnight, uncovered.

In morning, bring to boil with 1/2 teaspoon baking soda. Will foam. This is O.K. -- just skim off foam during boiling. Boil 10 minutes. Drain and rinse. Place back in kettle with remaining ingredients. Bring to boil, then simmer covered 1 1/2 to 2 hours, until vegetables are tender. (Can make in crock pot - just cook 8 hours or all day on low.)
