QUICK BAKED PIKE FILLETS 
1 1/2 to 2 lb. pike fillets
2 tbsp. butter, melted
salt and pepper
flour

Heat oven to 500°F. Season fillets with salt and pepper; dip in flour. Place in lightly greased baking pan, 13 x 9 x 2 pan. Drizzle with butter.

Bake, uncovered, 10 to 15 minutes or until fish flakes easily with fork.
