LIBBY'S PUMPKIN PIE 
2 eggs, slightly beaten
1 1/2 c. pumpkin
3/4 c. sugar
1 tsp. cinnamon
1/4 tsp. cloves
1 2/3 c. evaporated milk or light cream
1 (9 inch) unbaked pie shell
1/2 tsp. salt
1/2 tsp. ginger

Mix filling ingredients in order given. Pour into pie shell. Bake in 425 degree oven for 15 minutes. Reduce temperature to 350 degrees and continue baking for 45 minutes or until knife inserted into center of pie filling comes out clean. Cool. Garnish with whipped cream, if desired. If using frozen pie shell, this recipe fills 2.
