MEXICAN LASAGNA 
16 oz. turkey, ground
1/2 c. onion
2 tbsp. taco seasoning
1 (8 oz.) can tomato sauce
1 (16 oz.) jar picante sauce
1 c. cottage cheese
3 eggs
8 corn tortilla shells (soft)
6 oz. Monterey Jack cheese
4 oz. Cheddar cheese

Spray a 9 x 13 inch pan with cooking spray. Brown turkey with onion. Drain. Add taco seasoning, tomato, and picante sauce. Mix cottage cheese with eggs. Shred cheeses. In 9 x 13 inch pan layer: 1/2 meat, 1/2 cottage cheese and eggs, 4 tortillas, 1/2 cheese. Repeat. Bake at 350 degrees for 20 to 25 minutes.
