EGGNOG QUICK BREAD 
2 eggs
1 c. sugar
1 c. dairy eggnog (not canned)
1/2 c. butter, melted
2 tsp. rum extract
1 tsp. vanilla
2 1/4 c. all-purpose or unbleached flour
2 tsp. baking powder
1/2 tsp. salt
1/4 tsp. nutmeg

Heat oven to 350 degrees. Grease bottom only of 9x5 inch loaf pan. Beat eggs in large bowl. Add sugar, eggnog, butter, rum extract and vanilla. Blend well. Lightly spoon flour into measuring cup. Level off. Add flour, baking powder, nutmeg and salt, stirring just until dry ingredients are moistened.

Pour into greased pan. Bake at 350 degrees for 45-50 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes. Remove from pan. Cool completely. 1 - 16 slice loaf.
