CORN AND PEPPER RELISH | |
1 green pepper, seeded & chopped 3 red peppers, seeded & chopped 2 med. onions, peeled & chopped 3 c. corn kernels 2 tsp. salt 3/4 c. vinegar 1/2 c. sugar Basil or parsley, chopped Chop peppers the size of corn kernels. Put chopped peppers and chopped onions in saucepan. Cover with boiling water. Let stand for 5 minutes, then drain. Return peppers and onions to saucepan and add corn kernels, salt, vinegar, and sugar. Simmer, stirring until sugar has dissolved, for 5 minutes. Let cool. Keep covered in the refrigerator. Before serving, stir in chopped basil or parsley (optional). Makes about 6 cups relish. |
