SKILLET MEAT LOAF 
1 1/2 lbs. lean ground beef
1 (8 oz.) can tomato sauce
6-10 lg. stuffed olives, sliced
1 med. onion, chopped fine
1 egg
1 tsp. salt
1/4 tsp. pepper
1/2 c. rolled oats or bread crumbs (I use bread crumbs)

Heat oven 350 degrees. Mix ingredients with exception of 2/3 cup tomato sauce. Spread in heavy 10 inch skillet; cover with remaining tomato sauce. Bake 1 hour. Cut into wedges. Can also be shaped as a regular meat loaf and placed in skillet. Cover with tomatoes.
