FRIED ONION RINGS 
2 large sweet onions
1 egg
2/3 c. water
1 tbsp. vegetable oil
1 tsp. lemon juice
1 c. all-purpose flour
1 1/2 tsp. baking powder
1 to 1 1/4 tsp. salt
1/8 tsp. cayenne pepper
oil (for deep fat frying)

Cut onions into 1/2-inch slices; separate into rings. Place in a bowl; cover with ice water and soak for 30 minutes. Meanwhile, in a bowl, beat egg, water, oil and lemon juice. Combine flour, baking powder, salt and pepper; stir into egg mixture until smooth. Drain onion rings; dip into batter. In an electric skillet or deep fat fryer, heat 1-inch of oil to 375°F. Fry onion rings, a few at a time, for 1 to 1 1/2 minutes on each side or until golden brown. Drain on paper towels.

Yield: 4 to 6 servings.
