EASY CORN CHOWDER 
3 tbsp. butter
1 sm. onion, chopped
2 stalks celery, chopped
1 carrot, finely chopped
2 med. potatoes, cubed
1 can creamed corn
1 c. milk

Saute onion and celery until tender. Add 2 cups water, 1 teaspoon salt, potatoes and carrot. Simmer until potatoes and carrots are tender. Mash potatoes right in saucepan. Add creamed corn and 1 cup milk. Salt and pepper to taste.
