BRUNCH FOR A BUNCH 
1 lb. sausage (hot or mild)
3 c. frozen hash brown potatoes, thawed
1/2 tsp. salt
1/2 tsp. big black pepper (opt.)
3 c. (12 oz.) shredded cheddar cheese
12 eggs, beaten
2 c. milk
1/2 c. chopped green pepper (opt.)
1/2 c. chopped onion (opt.)

Cook sausage in skillet until brown, stirring to crumble; drain. Place hash browns in a lightly greased 13"x9"x2" glass baking dish, sprinkle with salt and pepper (optional). Layer sausage, cheese and green pepper and onion in glass dish. Combine eggs and milk, stirring well. Pour over layers in glass dish. Bake at 350 degrees for about 50 minutes. Serves 8 to 10.
