60 MINUTES CHICKEN 
4 boned chicken breasts
1 pkg. dry onion soup mix
1/2 c. Thousand Island dressing
1 1/2 c. rice, uncooked
1 c. frozen peas (opt.)
Garlic powder to taste
Pepper to taste
1/4 c. minced onion
3 chicken bouillon cubes
1 3/4 c. boiling water

Spray 2 quart casserole dish with non-stick spray. Add rice, peas and minced onions. Sprinkle with garlic powder and pepper. Dissolve bouillon cubes in the 1 3/4 cups of boiling water. Add to rice mixture. Place chicken on top.

In small bowl, combine Thousand Island dressing and the dry onion soup mix. Spread over chicken. Cover and bake 1 to 1 1/2 hours at 350 degrees. 4 servings.

NOTE: May need to add more water. A few tablespoons of apricot or peach preserves may be added to Thousand Island dressing.
