POTATO CASSEROLE 
8 slices bacon
4-6 white potatoes, crushed
Salt & pepper to taste
1 med. onion, chopped fine
1/2 stick butter, melted
1/4 c. parsley, chopped
2 eggs, beaten slightly
1 c. milk
1/4 c. Cheddar cheese, grated

Fry bacon until crisp. Break into small pieces. Cook potatoes until fork tender (about 10-12 minutes). Drain water from the potatoes, add salt and pepper. Mash potatoes until smooth.

Mix in bacon and drippings, onion, butter, parsley, eggs and milk. Stir until well blended. Pour into 2 quart buttered casserole dish. Sprinkle with cheese. Bake at 350 degrees for 30-40 minutes. Serves 4-6.
