SPINACH SALAD 
1 egg, beaten
2/3 c. sugar
1/2 c. apple cider vinegar
1/2 c. water
1 tsp. salt

In saucepan, combine ingredients. Heat to boiling, stirring constantly; cool. 1 med. onion, sliced 1/2 lb. mushrooms, sliced 10 to 12 slices bacon, cooked

Toss dressing with spinach, onion, and mushrooms. Garnish with crumbled bacon. Can do dressing and salad ahead, separately, and combine just before serving. Serves 6 to 8.
