HOPPIN' JOHN SQUARES | |
1/2 c. green pepper, chopped 1 tbsp. onion, chopped 2 tbsp. butter 2 tbsp. flour 3/4 tsp. chili powder 1/4 tsp. ground cumin 1 1/4 c. milk 1 c. Cheddar cheese, shredded 1 (15 oz.) can black eyed peas, drained 1 c. rice, cooked 3/4 c. ham, cooked and diced 2 eggs, beaten Saute green pepper and onion in butter until tender. Stir in flour, chili powder, and cumin. Add milk; cook and stir until bubbly. Remove from heat. Stir in 3/4 cup of cheese, black eyed peas, rice, ham, and eggs. Bake in 8 x 8 x 2 inch baking dish at 350 degrees for 30 minutes or until set. Top with remaining cheese. Let stand 5 minutes. Cut into squares. |
