POTATO DUMPLINGS | |
6 potatoes, boiled and peeled 2 eggs, beaten pinch of salt 1 cup all-purpose flour (more or less) fresh parsley or paprika (optional) Boil six medium-sized potatoes. Peel while hot and roll on a clean surface or pastry board with a rolling pin. Form into a heap, make a well in the center, pour in two beaten eggs, a pinch of salt and a cup of flour, knead together and roll, adding more flour, so that the mixture will be quite stiff. Cut into six pieces, form into 1 to 2 inch round dumplings and boil in boiling salted water. When done (they will begin to rise to the surface), cut in half, sprinkle with melted butter and fried minced onion and sprinkle with freshly chopped parsley or paprika. Submitted by: CM |
