ITALIAN CHEESE - FILLED BREAD 
2 lb. ricotta cheese
1/2 lb. Romano cheese
1/4 lb. mozzarella cheese
1 lb. Capicola or Genoa salami, diced
4 eggs
1 tsp. parsley
Salt & pepper
3 loaves Italian bread

Mix all ingredients, except bread, in a bowl. Remove ends of bread; spoon out dough. Fill bread with mixture; bake for 15 minutes in a preheated 350 degree oven. Serve hot or cold.
