LEMON MERINGUE PIE 
1 pie shell, baked
1 1/2 c. sugar
6 tbsp. cornstarch
1/4 tsp. salt
1/2 c. cold water
1/2 c. fresh lemon juice
3 egg yolks, well-beaten
2 tbsp. butter
1 1/2 c. boiling water
1 tsp. lemon peel, grated

MERINGUE TOPPING:

3 egg whites

Beat stiff with: 4 tbsp. powdered sugar 1/2 tsp. vanilla
