LEMON MERINGUE PIE 
1 c. sugar
1/4 c. cornstarch
1/4 tsp. salt
2 c. milk
4 eggs, separated
1 tsp. grated lemon rind
1/2 c. lemon juice
3 tbsp. butter
1 baked pie shell

Mix all ingredients together and cook over medium heat until thickened. Remove from heat and pour in 1 baked pie shell.

Topping:

1/2 tsp. cream of tartar
1/4 c. sugar
1/2 tsp. vanilla

Mix and beat with electric mixer until stiff. Cover pie and brown in the oven.
