This stew works best when your refrigerator is full of left (planned) overs. It is important to start with CABBAGE, 1/2 cup to 3 cups will do. Place cabbage (left over or fresh) in a large stew pot with 2 quarts water and place on high. Boil this earnestly while you clean out your refrigerator.
Left over hamburger, meat loaf, steak, roast, bar-b-que (mix or match, or whatever BEEF you have) will do perfectly for the meat part. Do add an ONION if you have one in the house. SHALLOTS will do also.
Put in any combination and amounts of the following: SQUASH, POTATOES, (mashed, fried, boiled, hash browns), GREEN BEANS, CORN, TOMATOES (fresh or stewed). That part of bottle of CATSUP. OKRA adds a lot to the flavor. That little dab of A-1 STEAK SAUCE left in the bottle. Do you have a little bit of BAR-B-QUE SAUCE left in a jar? It works. A little WORCESTERSHIRE SAUCE. CARROTS (cooked or raw). A dab of cooked RICE or a few NOODLES or MACARONI. A bit of fresh PARSLEY, or ENGLISH PEAS.
I have even added a few cooked PINTOS, BLACK-EYE PEAS, BUTTER BEANS, and/or RANCH STYLE BEANS. Continue adding and stirring, put in enough water to keep the consistency right. Add salt and pepper to taste. Taste. You may need to add chili powder, garlic powder, onion powder (especially if you didn't have onions or shallots) beef bouillon, red pepper or paprika. Taste as you go. Most of the time the results are terrific. Serve this with cornbread, hot rolls or toast. A nice cold dessert with this makes a delicious meal.
