EGGPLANT CASSEROLE 
1 lg. eggplant
3 tomatoes
1/2 c. onion, optional
1 c. grated cheese, Mozzarella or American

Peel eggplant and cut into 1/2 inch slices. Layer baking dish with one layer of eggplant slices, then one layer of tomato slices, add onion layer (optional); repeat until complete ending with eggplant as the top layer. Bake in oven at 375 degrees for about 25 minutes. Microwave time is about 12 minutes, cover if you use microwave. Eggplant should be tender when done. Next add layer of cheese and allow to cook long enough to melt cheese completely. Serves 6 to 8 people.

Since microwave ovens vary in power, you may need to adjust your cooking time.
