PUMPKIN BREAD III 
2 slightly beaten eggs
2 c. sugar
1/2 c. oil (Crisco, any vegetable oil)
1 c. Libby's solid pack pumpkin
2 1/4 c. flour
1 tbsp. pumpkin pie spice
1 tsp. baking soda
1/2 tsp. salt
Cinnamon sugar (for sprinkling on batter)
Pecan/walnuts (for garnishing) (opt.)

1. Combine eggs, sugar, oil and pumpkin. Mix well with electric beater.

2. Combine flour, pie spice, soda and salt in a bowl.

3. Combine flour mixture into egg mixture (Step 1).

4. Mix until well blended and moistened.

5. Pour or spoon batter into two greased and floured 8" x 3 3/4" x 2 1/2" aluminum loaf pans.

6. Sprinkle top with cinnamon and sugar.

7. Bake at 350 degrees for 1 hour or until toothpick inserted in center comes out clean.

NOTE: One cup chopped pecans or cranberries can be blended into batter.
