STEVE'S ENCHILADAS | |
1 lb. ground meat 1 lg. can Wolfe Brand Chili with beans 12 corn tortillas 8 oz. Cheddar cheese 8 oz. Mozzarella cheese 1/2 c. cooking oil 1 sm. can enchilada sauce Options: You can use ground turkey instead of ground meat. Use oblong or square pan. Grate and mix up cheese and set aside. In shallow pan or skillet heat oil (be sure not to use shortening) almost to boiling; lower heat. Add 1 corn tortilla at a time just long enough to make tortilla hot and flexible so it will roll up without breaking. When you take tortilla out of oil place on paper towel to take some of the oil off. Put as much grated cheese as desired on tortilla and roll it up, then place rolled up tortilla in oblong or square pan; leaving them side by side to help keep them rolled up. After all tortillas have been rolled up and placed in pan, pour meat sauce over them and add any extra cheese on top. Meat Sauce: Cook meat and season as desired. Mix Wolfe Brand Chili with beans thoroughly and add half of the small can of enchilada sauce. Bake in 300 degree oven until cheese melts. |
