CHICKEN ENCHILADA'S 
12 med. flour tortillas
Salad oil
1 can enchilada sauce
2 lg. onions
8 oz. cream cheese
Shredded Jack cheese
1 pt. whipping cream
2 c. cooked chicken (approx. 1 1/2 lb. boneless)

Saute onions in frying pan and add cooked chicken. Remove from heat and add cream cheese, salt and pepper. Heat salad oil and fry tortillas on both sides and dip in enchilada sauce and filling and roll up. Lay seam side down in cake pan; sprinkle with cheese and pour whipping cream over all. Bake at 375 degrees uncovered for 20 minutes.
