VEGETABLE SOUP 
8 c. beef stock or water
3 carrots, diced
1 c. fresh string beans
1 turnip, diced
1 parsnip, diced
1 tsp. salt
1 c. chopped parsley
2 onions, diced
1 c. peas
1 can tomato soup
1/4 tsp. pepper

Bring stock or water to a boil in a large soup kettle. Add vegetables, tomato soup and seasonings. Reduce heat and simmer until vegetables are tender. Serve hot with crackers. Serves 6.
