ORANGE - AVOCADO SALAD WITH
POPPYSEED DRESSING
 
1 orange, peeled & thinly sliced, cross grain
1 ripe avocado, thinly sliced, cross grain
1 med. white or yellow onion, sliced very thinly in rings
Lettuce leaves

Marinate sliced avocado in 2 to 3 tablespoons lemon juice. On individual salad plates, place shredded lettuce. Alternate slices of orange and avocado. Place onion rings on top. Pour dressing on salad just before serving.

POPPY SEED DRESSING:

1/2 c. white sugar
1 tsp. dry mustard
3/4 tsp. salt
1/4 c. white or cider vinegar

Combine sugar, dry mustard, salt and white or cider vinegar. Stir thoroughly. Slowly add 3/4 cup oil and continue to beat until thick. Add 2 tablespoons of poppy seeds.
