COUNTRY POTATO PANCAKES 
3 lg. potatoes, peeled (about 2 tbsp.)
2 eggs, slightly beaten
1 tbsp. grated onion
2 tbsp. flour
1 tsp. salt
1/2 tsp. baking powder
Mazola corn oil

Finely grate potatoes (drain any liquid). Add eggs, onion, flour, salt and baking powder. In frying pan add oil to the depth of 1/8 inch. Heat over medium heat (375 degrees). Add batter by heaping tablespoonsful in hot oil. Fry until golden brown on both sides. Yield about 24 pancakes.
