FAMILY MEATLOAF | |
1 1/2 lb. meatloaf mixture (Giant carries it) 1 lg. potato (peeled, cubed, cooked and mashed) 1 lg. can evaporated skim milk 1 egg 1/2 c. ketchup 1 tbsp. parsley flakes 1 pkg. Lipton Onion-Mushroom Soup mix (1 envelope from box) 1/2 tsp. pepper Mix all ingredients in a large bowl. (I use my hands.) Transfer mixture to 13 x 9 pan and shape into a "loaf". Coat outside of meatloaf with additional ketchup if desired. Bake at 375 degrees 50 to 60 minutes. Variations: Add 1 cup shredded Cheddar cheese to mixture before serving. Bake in smaller, individual loaves if you're in a hurry. Adjust baking time according to loaf size. |
