FESTIVITY FRUIT CAKE | |
1/2 c. seeded raisins 1/4 c. nutmeats 4 oz. mixed fruits & peels 1 1/3 c. sifted enriched flour 1 tsp. salt 1 tsp. baking soda 1/4 tsp. allspice 1/4 tsp. cloves 1/2 tsp. nutmeg 1/2 tsp. cinnamon 1/4 c. shortening 1/2 c. brown sugar 1 egg 1/2 tsp. vanilla 1/2 sq. (1/2 oz.) chocolate 3/4 c. applesauce Nuts, citron & candied cherries for decorations Cut up raisins with kitchen scissors. Cut up nutmeats and mix with raisins and mixed fruits and peels. Sift flour once before measuring. Sift together with salt, soda, allspice, cloves, nutmeg and cinnamon. Cream shortening. Add brown sugar gradually while continuing creaming. Add vanilla, melted chocolate and applesauce. Stir in flour mixture. Add fruits, nuts and peels, combining thoroughly. Pour batter into a well greased heat resistant pie plate. Decorate with cherries, citron and nuts. Cover with another pie plate. Bake in slow oven (300 degrees) about 1 hour and 30-35 minutes or until a toothpick comes out clean. Cover with pie plate and seal with cellophane tape before Christmas wrapping. |
