DATE MACAROONS 
1 cup sugar
1/4 cup finely crushed saltines (about 15 crackers)
1/2 teaspoon baking powder
1-1/3 cups flaked coconut
3/4 cup chopped pecans
1/2 cup chopped dates
1 teaspoon vanilla extract
3 egg whites

In a large bowl, combine sugar, cracker crumbs and baking powder; stir in coconut, pecans, dates and vanilla. In a small mixing bowl, beat egg whites until stiff peaks form; Fold into coconut mixture. Drop by tablespoonfuls 2 inches apart onto lightly greased baking sheets.

Bake at 300°F for 12-14 minutes or until edges are lightly browned. Cool for 2 minutes before re- moving to wire racks.

Yield: 3-1/2 dozen.
