VENISON SAUSAGE (HOT) 
6 lbs. ground venison
4 lbs. ground pork
3 tbsp. salt
1 tbsp. ground white pepper
1 tbsp. rubbed sage
1 tsp. ginger
2 tsp. nutmeg
1 tbsp. thyme
2 tbsp. ground red pepper
4 oz. ice water

Mix ingredients together well, form into patties.
