SCALLOPED SWEET POTATOES WITH
APPLES
 
3 med. size sweet potatoes
4 tart cooking apples
3/4 c. brown sugar
3 tbsp. butter
2 to 3 tbsp. water

Cook sweet potatoes until tender; peel and slice crosswise. Peel, core and slice apples. Beginning with apples put in layers with sweet potatoes. Sprinkle each layer of sweet potatoes with 1/4 cup brown sugar and 1 tablespoon butter. There should be about 3 layers of each. Sprinkle top with 2-3 tablespoons water.

Bake at 350 degrees for 30 minutes or until apples are tender and top is browned. Can take as long as 45 minutes, depending on the apples. If you double the recipe, add 1 less apple, but double the amount of sweet potatoes. Bake in 9x13 inch pan.
