SHAKE AND BAKE FOR CHICKEN 
4 c. dry bread crumbs
1/2 c. vegetable oil
1 tbsp. salt
Onion or garlic; optional
1 tbsp. paprika
1 tsp. pepper

Put crumbs in deep bowl. Stir in oil with fork. Add seasonings and mix. Roll chicken in this or shake in sack. Lay on cookie sheet and bake for 1 hour at 350 degrees.

I used this recipe and loved it; it's very different from dry mixes. I dipped a piece of tilapia in beaten egg and lightly coated it with the mix, then put in on my mini-George Forman Grill, instead of baking. It was wonderful!!!

Four cups of bread crumbs seems like an awful lot -- that actually makes enough coating mix to feed an army for several days.

Since I don't like the idea of wasting that much leftover coating mix (I don't use nearly that much at one time), can the remainder be stored, say in the refrigerator or the freezer? If so, what is the best method of storage, and for how long can the leftover coating mix be safely stored?

Since it is just my wife and I:

1/2 cup seasoned breadcrumbs
1 tbsp. oil (I use my garlic infused olive oil)
1 tsp. black pepper (instead I use 1/4 tsp. cayenne + 1 tsp. sugar)
1 tsp. paprika
