MEXICAN MEDLEY | |
1/2 envelope taco mix 1 can refried beans 1 (8 oz.) sour cream 1 med. ripe avocado 2 tbsp. lemon juice 1/2 bunch chopped green onions 4 oz. chopped black olives 1 (7 oz.) can green chili peppers, chopped 10 chopped green olives 2 oz. picante sauce 3 med. tomatoes, chopped 1 c. grated cheddar cheese Mix taco mix and beans. Put into quiche pan. Spread sour cream over beans. Peel and mash avocado. Mix with lemon juice and spread over sour cream. Mix onions, olives, peppers and green olives. Spoon on. Cover top with grated cheese. Ingredients can be prepared the day before serving and refrigerated until all are assembled. Serve with tortilla chips. |
