CUBED STEAKS PARMESAN 
1 egg
Dash of pepper
1/4 c. finely crushed saltines
1/4 c. Parmesan cheese
4 beef cubed steaks (about 4 oz. each)
2 tbsp. cooking oil
1 (8 oz.) can pizza sauce

Beat together egg, pepper and 1 tablespoon water. Combine crumbs and 2 tablespoons of the cheese. Dip steaks in egg mixture, then into crumbs. In skillet, brown the steaks in hot oil; drain off fat. Pour in pizza sauce. Cover and reduce heat. Simmer 20 minutes, adding a little water if necessary to keep the sauce from sticking. Sprinkle with the remaining 2 tablespoons cheese. Makes 4 servings.
