RHUBARB BREAD 
1 1/2 c. brown sugar
2/3 c. salad oil
1 egg
1 c. buttermilk or 1 tbsp. lemon juice or vinegar and 1 c. milk
1 tsp. salt
1 tsp. vanilla
2 1/2 c. flour
1 tsp. baking soda
1 1/2 c. finely cut rhubarb
1/2 c. nuts

Combine all ingredients. Pour into 2 greased regular loaf pans. Top with following topping. Bake at 325 degrees for 50 to 60 minutes.

TOPPING:

1/2 c sugar
1/2 c. nuts
1 tsp. cinnamon
2 tbsp. melted butter

Combine ingredients, mixing well.
