OVEN BAKED SPICY RICE 
1 c. uncooked rice (not instant)
1 (10 oz.) can Ro-tel tomatoes with chilies
1 c. water
1 tsp. salt
4 tbsp. cooking oil
1/2 c. onion, chopped
1 c. cheese
Green pepper to taste

Combine all ingredients in 2 quart casserole dish. Bake covered at 350 degrees for 45 minutes. Uncover, stir and cook 15 minutes more.
