BAKED MACARONI AND SAUSAGE 
1 lb. Italian sweet sausage (can use turkey sausage)
1 green pepper, chopped
1 onion, chopped
2 c. water
1 can tomato paste
Salt and pepper
1 tsp. Italian seasoning
1 lb. elbow macaroni
1 lb. Mozzarella cheese, shredded
1/2 c. grated Parmesan cheese

Remove sausage from casings. Crumble and fry with green pepper and onion. Stir in tomatoes, water and paste. Simmer stirring occasionally 10 minutes. Season with salt, pepper and seasoning. Cook macaroni, drain. Layer macaroni and Mozzarella cheese in 9 x 13 x 2 inch pan ending with macaroni. Pour sauce over. Sprinkle with Parmesan cheese. Bake at 400 degrees for 25 to 30 minutes or until bubbly and brown.
