FRUIT - OF - ALL - KNOWLEDGE
CAKE
 
1 c. shortening
1 c. granulated sugar
1/2 c. brown sugar, packed
2 eggs
1 c. buttermilk
2 1/2 c. all-purpose flour
1 tsp. baking soda
1 tsp. baking powder
1 tsp. cinnamon
1 tsp. salt
1 tsp. vanilla
2 c. apple, diced

TOPPING:

1/4 c. granulated sugar
1/4 c. brown sugar, packed
1/2 tsp. cinnamon
1/2 c. coconut, shredded
1/2 c. chocolate or butterscotch chips

Grease and flour 13x9x2 inch pan. Heat oven to 350 degrees. Cream shortening and sugars. Add eggs and buttermilk; blend. Stir dry ingredients together; sprinkle a little of the mixture over the apples and toss.

Blend remaining dry ingredients into creamed mixture. Stir in vanilla and apple; mix well. Pour into prepared pan. Combine topping ingredients; sprinkle over batter. Bake 45-50 minutes.
