FRESH STRAWBERRY PRESERVES 
2 c. water
1 envelope unflavored gelatin
2 c. sliced fresh strawberries (about 1 qt. whole berries)
1 tsp. lemon juice
1/3 c. honey

Pour 1 cup water into a large saucepan and sprinkle gelatin over it. Let stand for 5 minutes. In a blender puree 1/2 the berries with 1 cup water, lemon juice and honey. Add remaining berries and pureed mixture to saucepan. Heat just to a boil, stirring constantly. Ladle into 1/2 - pint jars and refrigerate. For longer keeping, freeze. Yields about 2 pints.
