SWEET POTATO SOUFFLE 
3 c. sweet potatoes, mashed and drained
1 c. sugar
1/2 tsp. salt
2 eggs
1/2 c. sweet milk
1/3 stick butter
1 tbsp. vanilla

Melt butter and mix with potatoes. Add sugar, salt, milk and vanilla. Beat eggs and fold in. Pour into greased baking dish and cover with topping. Cook at 350 degrees for 35 minutes or until toothpick comes out clean.

TOPPING:

1 c. brown sugar
1/3 c. flour
1 c. chopped nuts
1/2 stick butter

Mix dry ingredients and pour over souffle. Pour melted butter over topping. (For large baking dish, make 1 1/2 times this recipe).
