PUMPKIN-NUT BREAD 
2 c. all-purpose flour
2 tsp. baking powder
1/2 tsp. salt
1/2 tsp. pumpkin pie spice
1/2 tsp. baking soda
1 c. packed brown sugar
1/3 c. shortening
2 eggs
1 c. canned pumpkin
1/4 c. milk
1/2 c. chopped walnuts

1. Preheat oven to 350 degrees. Grease bottom of loaf pan.

2. In small bowl, stir together flour, baking powder, salt, pumpkin pie spice and soda.

3. In a medium bowl, use a wooden spoon to beat brown sugar and the 1/3 cup of shortening until mixed. Add one egg and beat well. Add second egg and beat well. Stir in pumpkin and milk.

4. Stir in flour mixture just until smooth. Stir in nuts.

5. Spread evenly in greased loaf pan.

6. Bake for 1 hour. Remove from oven and set on cooling rack. Wait until completely cooled before removing from loaf pan.
