PUMPKIN NUT BREAD | |
Grease a 9 x 5 x 3 inch bread pan, or spray with Pam. 2 c. flour 1 tsp. baking soda 3/4 tsp. cinnamon 3/4 tsp. nutmeg 1/2 tsp. salt 1/4 tsp. ginger 1 c. white sugar 1/2 c. brown sugar 1 c. canned pumpkin 1/2 c. vegetable oil 2 eggs 1/4 c. water 1 c. walnuts OR pecans, coarsely chopped Combine dry ingredients in a medium mixing bowl. Put all other ingredients in large mixing bowl. Beat well with electric mixer. Add flour mixture to pumpkin mixture and beat just until all ingredients are blended. Add nuts and stir until well distributed. Pour into prepared bread pan. Bake in preheated 350°F oven for 65-75 minutes until golden brown, or until a knife is inserted in center and comes out clean. Cool and run a knife around pan and remove bread. |
