COCONUT POUND CAKE 
5 eggs
2 c. sugar
1 c. butter
2 c. flour
1 tsp. salt
1 1/2 tsp. baking powder
1 c. buttermilk
1 1/2 tsp. coconut extract
1 can flake coconut

Mix all ingredients and bake in a greased and lined stem pan at 350 degrees until toothpick comes out clean.

GLAZE:

1 c. sugar
1/2 c. water
1 tsp. coconut extract

Boil 1 minute and pour over cake while it is still hot and in the stem pan. Let stand about 45 minutes to one hour before removing from pan
