FRUIT CRACKERS | |
2 c. rolled oats 1/3 c. whole wheat flour 1/3 c. oil 1/3 c. cold water 1/2 tsp. salt FILLING: 3/4 c. ground raisins 1/4 c. water 1/2 c. chopped walnuts 1/3 c. sugar ALTERNATE FILLING: 3/4 c. chopped dates 1/4 c. water 1/2 c. nuts No sugar Place fruit, water and sugar in saucepan. Bring to boil and stir until most of water is absorbed. Add nuts. Combine dry ingredients for crackers and mix well. Beat oil and water together until oil is emulsified. Add to dry ingredients, mixing with fork while adding. Knead dough to develop gluten. Half of dough may be crumbled into well greased pan and flattened out for bottom crust. Spread filling over bottom crust. Cover with remaining crust by crumbling over fruit. Press crust with fingers to flatten. Bake at 400 degrees for 20-25 minutes until slightly brown. Cut in squares while hot. Let remain in pan until cool. Fruit bars may be made by increasing amount of fruit and using same crust. |
