SPINACH PIE 
2 lg. onions, finely chopped and browned
1 lb. phyllo
5 boxes frozen chopped spinach
3/4 c. butter
2 tbsp. salt
2 tbsp. dill weed
1 tsp. sugar
1 lb. cottage cheese
1/2 lb. feta cheese
1/2 c. Romano cheese
1/2 c. oil
5 eggs
1/2 c. cream of rice cereal

Squeeze spinach to drain as much water as you can. Add onion and 3 cheeses. Add eggs, sugar, salt, dill, and cream of rice; mix. Add oil, butter; mix.

Roll out 3 or 4 layers of phyllo. Place spinach mixture inside. Turn edges in and roll. Spread with butter as you go. Can be frozen now.

Put slice marks where you want to cut pieces before you put in oven so they cut more easily without cracking. Bake at 375 degrees for 40 minutes until phyllo is golden brown.
