SIMPLE FISH CHOWDER
2 lb. fish
6 slices bacon, diced
2 sm. onions, chopped
2 tbsp. salt
Dash of pepper
1 qt. milk

Simmer fish in slightly salted water until meat can be separated from bones easily. Save water but drain off bits of skin, bone, etc. Fry bacon and onion together until browned. Add potatoes to water in which fish was cooked, plus salt and pepper. When potatoes are done, add fish, bacon, onions and milk. Bring to boil but don't let it boil! Use minimum amount of water for cooking fish and potatoes. Serves 6. Note: Almost any fish can be used, small trout are delicious. Tomatoes can be added if desired.
