SAINT FANOURIOS CAKE 
3 c. all-purpose flour
2 tsp. full baking powder
1 tsp. cut flat baking soda
1 tsp. cinnamon
3 tsp. scrapes from orange peel
1 c. sugar
1 c. orange juice
2/3 c. olive oil
1 c. walnuts, chopped (optional)

Beat olive oil in blender for a few seconds. Add sugar and blend again well. Add 1/2 cup orange juice (the rest of orange juice save to dissolve baking soda).

In a bowl, place all of the flour, baking powder, cinnamon, scraped orange peel. Then empty contents of blender and remaining orange juice with baking soda and mix contents well (optional - add walnuts and mix).

Pour into a flat glass baking dish or pan (9x12) and bake at 325 degrees F. until done.
