COUNTRY LAMB LOAF | |
2 lb. ground lamb 2 eggs beaten 26 buttery crackers, crushed 1/3 c. chop parsley 1 clove garlic pressed 3 tbsp. soy sauce 1 tsp. cumin 1/2 t. pepper 1 c. ketchup 3 to 4 lg. mushrooms 1/2 c. pineapple chunks 3 pineapple slices, garnish Preheat oven to 350 degrees. Combine lamb, eggs, crackers, parsley, soy sauce, garlic, cumin, pepper and 1/2 of ketchup. Place 1/2 of mixture in 9x5x3 loaf pan. Place mushrooms in a row down center of meat mixture, arranging pineapple chunks on each side of mushrooms. Top with remaining meat mixture, sealing edges together. Brush top with remaining ketchup. Bake for 1 1/2 hour. Garnish with pineapple slices. Serves 6 to 8. |
