SUMMER BEAN SALAD 
DRESSING:

1/2 c. olive oil
1 tsp. salt
1/4 tsp. black pepper
1/4 c. red wine vinegar
1 tsp. sugar

SALAD:

1 (19 oz.) can chic peas, drained
1 (19 oz.) can red kidney beans, drained
1 (16 oz.) can waxed beans, drained
1 (16 oz.) can green beans, drained
1 (15 oz.) can green peas, drained
2 (11 oz.) cans mandarin orange segments, drained
1 green pepper, cut into thin 1" strips
1/2 of a med. red onion, cut into 1" strips
1/4 c. chopped parsley
Lettuce leaves
Bacon pieces

For dressing, whisk together oil, vinegar, salt, sugar and pepper. Set aside. In a large bowl combine remaining ingredients, except lettuce leaves and bacon pieces. Toss with dressing. Chill. Serve on lettuce leaves and sprinkle generously with bacon pieces.
