SUMMER CHICKEN SALAD 
2 chicken breasts
1 sm. can crushed pineapple, drained
1/2 c. green seedless grapes, cut in halves
1/2 c. celery, chopped
2 green onions, chopped
3 tbsp. salad dressing
2 tbsp. sour cream or plain yogurt
1 tbsp. pineapple juice
Salt & pepper to taste

Total Cooking Time: 7 minutes.

Remove skin from chicken. Place chicken in microwave-safe baking dish. Cover with waxed paper. Microwave on high power 7 minutes, or until juices are no longer pink. Uncover dish, and cool. Remove bones from chicken and cut chicken in bite-sized pieces. Place in mixing bowl. Add pineapple, grapes, celery and onions. Combine all remaining ingredients in small bowl or measuring cup. Add to chicken mixture. Mix well. Chill. Serve as sandwich spread or on lettuce leaf. Serves 4 to 6.

Since microwave ovens vary in power, you may need to adjust your cooking time.
